Village Oven Tagines
Some dishes get their flavour from the oven, and some tagines cannot be rushed. That is why Hagouga's tagines have their own time, their own cooking and their own country character.

A village tagine is more than a clay pot
The village tagine is part of the roots of Egyptian cooking: country ingredients, slow cooking, and an oven that brings out the best in every ingredient. (In Egypt, “tagine” means both the clay pot and the dish cooked in it.)
At Hagouga we have seven tagines, from oxtail, rib and meat with onion to freekeh, okra and sausage. Each one has its own taste and personality.
If you love village-oven food, do not miss the roz me'ammar with cream and country ghee, our best-known tagine.
Seven tagines, each with its own story
The Hajj's Tagine: oxtail and lamb fries (testicles), slow-cooked for 6 hours in a bone-marrow marinade. A tagine made for people who know what a rich, serious dish should be.
The Oxtail Tagine with onion, and the Onion Tagine (Basaliya) with meat and plenty of onion. Country food with its true taste, no fuss.
The Tarwi'a Tagine with Onions, with pieces of rib and the rich flavour that comes out with slow cooking.
And there are also the Freekeh & Meat Tagine, the Okra & Meat Tagine and the Hagouga Sausage Tagine with potato slices. Each one is worth trying.
