Duck with Country Morta… the Hagouga Way

Egyptian duck has its method and its roots. At Hagouga we added our own touch: morta, the ghee crumbs left from clarifying country ghee, which we brush on the duck before it goes into the oven to brown.

Half a duck browned with morta and country ghee to a golden colour, served on stuffed vine leaves on an oval dish.

The secret of our duck is the morta

Our duck is first simmered with vegetables and spices, the old Egyptian way, until it is cooked and ready for browning.

Then comes the Hagouga touch we are proud to have been the first to serve in restaurants: we brush the duck with country morta before it goes into the oven.

Morta, for those who do not know it, is the rich crumbs that come out while country ghee is being clarified. Its flavour is concentrated and distinctive, and brushed on the duck before browning it gives a rich flavour and a browned skin that opens the appetite.

What would you like with your duck?

You have three choices: “Half Duck” browned on its own, “Half Duck with Vine Leaves” for stuffed-vine-leaf lovers, or “Half Duck with Rice & Molokhia” for a true Egyptian table.

Pick what you like, and you will find each dish's price on the menu.

If you choose the duck with molokhia, know that our molokhia comes with a tasha of country ghee, garlic and coriander.

And because our duck is not just a browned duck, we were also the first to serve roqaq stuffed with boneless duck in restaurants. You can try it in the Hagouga Roqaq Tray.
